Marzipan is a delicious paste of ground almonds and sugar molded into decorative forms, covered with chocolate, or used in cakes and cookies.
Enjoying marzipan during the Christmas holidays has been a Scandinavian tradition for generations. Throughout the years, whether
purchased at the local grocer, or made at home, marzipan was served in most Danish homes during cozy gatherings.
As a young Danish girl, Susanne Christensen would help her mother form marzipan from prepared marzipan paste that was
available in stores.
Susanne continued this tradition in
her own home, but in 1998 she also began making marzipan covered in dark and milk chocolate. Friends and family would enjoy
these treats when visiting, or as small hospitality gifts. When Susanne and her husband moved from Denmark
to America in 2002, it was difficult finding the prepared marzipan paste. In order to continue her tradition, she decided
to develop and perfect her own marzipan recipe from scratch. Eventually, Susanne created the special (secret) blend of smooth
almond paste with just enough sugar to perfectly complement the fine Belgian chocolate covering – making dozens of delicious
chocolate covered marzipan chocolates and hand-dipped truffles. Although some people were not familiar with the marzipan tradition,
friends and family loved the chocolates and pleaded for more! Soon she began making these yummy marzipan
chocolate gifts for birthdays, Easter, Mother’s Day and other occasions. Often, the house filled
with the wonderful aromas of the marzipan chocolates as she made more and more to satisfy the growing list of marzipan lovers.
Susanne wondered if other people had trouble finding fresh handmade marzipan chocolates. She searched the
internet and could not find all natural, handmade marzipan chocolates with the same quality or taste. Susanne also discovered
that other American marzipan lovers were searching for truly delicious marzipan chocolates. An idea was born...
